Chicken and Pork Stew

Ingredients

  • 2 Tbsp. olive oil
  • 2 Tbsp. diced onion
  • 2 tsp. minced fresh garlic
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 8 oz. unpeeled diced red potatoes
  • 4 oz. yellow corn, fresh OR frozen thawed
  • 4 oz. pulled smoked chicken legs
  • 4 oz. pulled pork
  • 1 cup chicken stock
  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh parsley

Directions

  • 1. Sauté onion and garlic in oil in medium saucepan on medium heat 1 minute, stirring constantly. Add dried herbs; sauté 30 seconds.
  • 2. Stir in remaining ingredients except parsley. Bring to a boil; reduce heat. Simmer on low heat, uncovered, 12 to 15 minutes or until potatoes are tender.
  • 3. Divide soup evenly between 4 bowls. Sprinkle with parsley and serve.
