2 lb. red-skinned sweet potatoes, peeled, cut into 3/4" cubes
3 large shallots, chopped
2 Tbsp. balsamic vinegar
2 tsp. maple syrup
1 tsp. chopped fresh thyme
Directions
1. Cook pork in 2 Tbsp. of the oil in skillet on medium-high heat 1 to 2 minutes or until brown. Remove from skillet. Place in a bowl.
2. Add potatoes to skillet. Cook 5 to 7 minutes or until brown. Remove from skillet; add to pork.
3. Cook shallots in same skillet in remaining 1 Tbsp. oil on medium heat 3 to 4 minutes or until golden brown. Stir pork and potatoes into shallots.
4. Pour combined balsamic vinegar, maple syrup and thyme over mixture; stir to coat. Cook, stirring occasionally, 1 to 2 minutes or until heated through. Divide evenly between 6 plates and serve.
