Bacon Coated Parsnips

Ingredients

  • 16 slices bacon
  • 1 lb. peeled halved parsnips
  • 1 egg
  • 8 oz. sesame seeds
  • Vegetable oil (for deep-frying)

Directions

  • 1. Preheat standard oven to 350°F. Line sheet pan with parchment paper; set aside.
  • 2. Wrap 1 slice bacon slice around each parsnip half.
  • 3. Whisk egg in medium bowl. Place sesame seeds in shallow bowl.
  • 4. Dip each parsnip half into egg, then into sesame seeds, turning to coat evenly on all sides.
  • 5. Heat 2-inches vegetable oil in medium saucepan on medium-high heat to 350°F. Fry parsnips, in batches, 1 to 2 minutes or until sesame seeds are golden. Drain parsnips on paper towels.
  • 6. Arrange fried parsnips on prepared sheet pan. Bake 6 to 7 minutes or until parsnips are softened. Plate 4 pieces per serving.
