Pork & Bacon Stew

Ingredients

  • 5 slices diced thick-cut bacon
  • 1-1/4 lb. pearl onions
  • 2 Tbsp. all-purpose flour
  • 3-1/2 lb. Pulled Pork
  • 1-1/2 lb. unpeeled halved baby red potatoes
  • 2 cups reduced sodium chicken broth
  • 1-1/2 cups peeled chopped parsnips
  • 1-1/2 cups hard apple cider
  • 1/2 cup chopped shallots
  • 2 Tbsp. chopped fresh sage
  • 3 cups peeled cored diced Granny Smith apples
  • 1 Tbsp. Dijon mustard

Directions

  • 1. Cook bacon in saucepot on medium heat until brown and crisp. Reduce heat to low. Stir in onions and flour. Cook 6 minutes, stirring frequently.
  • 2. Stir in pork, potatoes, broth, parsnips, cider, shallots and sage. Simmer, uncovered, on low heat 15 minutes.
  • 3. Stir apples and mustard into pork mixture. Simmer, uncovered, 5 minutes. Divide stew evenly between 6 plates and serve.
