Green Beans with Sage and Bacon
Ingredients
2 1/2 lb. fresh green beans, trimmed
8 oz. chopped bacon
2 Tbsp. extra-virgin olive oil, divided
3 Tbsp. chopped fresh sage
Directions
1. Bring beans in water to cover in large pot to a boil on medium-high heat; reduce heat to medium-low. Simmer, uncovered, 4 to 6 minutes or until crisp-tender; drain.
2. Toss bacon and 1 Tbsp. of the oil in large skillet. Sauté on medium heat 8 to 10 minutes or until bacon is crisp. Add sage and cook 1 minute. Remove from skillet; set aside.
3. Heat remaining 1 Tbsp. oil in same skillet on medium-high heat. Sauté beans 4 to 5 minutes or until heated through. Add bacon mixture; toss to blend.
