Ham and Cheddar Frittata
Ingredients
6 large eggs
1/2 cup milk
1-1/2 tsp. dry mustard
3/4 tsp. crushed red pepper flakes
1/4 tsp. salt
2 cups toasted white bread cubes
1 Tbsp. olive oil
2 cups refrigerated or frozen Hash Brown Potatoes with Peppers and Onions
2 cups chopped ham
4 oz. Cheddar cheese, cut into 1/2-inch cubes
Directions
1. Preheat standard oven to 400°F. Whisk eggs, milk, mustard, red pepper flakes and salt in bowl. Stir in bread cubes; set aside.
2. Cook potatoes in olive oil in large skillet on medium-high heat 10 to 12 minutes or until golden brown and crisp.
3. Stir in ham. Cook 2 minutes, stirring frequently.
4. Pour egg mixture into skillet. Cook on medium heat until eggs start to set around edges. Stir in cheese.
5. Place skillet in oven 10 to 15 minutes or until cheese is melted and eggs are set.
6. Let frittata sit in skillet 2 minutes. Gently slide out of skillet. Cut into 4 wedges and serve.
