1 sourdough roll, horizontally cut in half, toasted
1 oz. shredded romaine lettuce
2 oz. ketchup
1 tsp. dried chipotle pepper
Directions
1. Fry tortilla strips in oil until crisp; drain. Set aside.
2. Cook ham on oven proof-plate under heated salamander or broiler 1 to 2 minutes per side. Sprinkle both sides with pepper. Top with cheese. Return to salamander just until cheese is melted.
3. Place lettuce on bottom half of roll. Top with ham and melted cheese. Sprinkle with fried tortilla strips.
4. Cover with top of roll. Serve with combined ketchup and chipotle peppers.
