Mini Calzones with Pepperoni

Ingredients

  • Dough:
  • 4 cups all-purpose flour
  • 1 Tbsp. salt
  • 1 Tbsp. butter, melted
  • 3/4 tsp. sugar
  • 1-1/2 cups lukewarm water
  • 2 packages dry yeast
  • 2 Tbsp. olive oil
  • Filling:
  • 8 oz. pepperoni slices
  • 8 oz. shredded Mozzarella cheese
  • 8 oz. sliced fresh mushrooms
  • Egg wash (optional)
  • Sesame seeds (optional)
  • Dried thyme (optional)

Directions

  • 1. Place flour, salt, butter and sugar on a flat surface. Create a well in center.
  • 2. Combine water and yeast. Add to flour mixture. Knead ingredients until well combined and mixture forms a ball. Cover and let dough rise 2 hours.
  • 3. Preheat convection oven to 375°F.
  • 4. Divide dough into 2 oz. portions. Roll each on lightly floured surface to form a 7-inch circle. Divide pepperoni, Mozzarella and mushrooms evenly over half of each circle.
  • 5. Fold dough over filling. Seal edges. Place on parchment paper-lined half sheet pan. Brush with egg wash. Sprinkle with sesame seeds and thyme.
  • 6. Bake 7 to 9 minutes. Cut each calzone into 3 strips and serve.
