Italian Chopped Salad with Salami and Pepperoni
Ingredients
1 head romaine lettuce, torn into bite-size pieces
1-1/2 cups canned artichoke hearts, chopped, well drained
4 oz. julienned Genoa salami
4 oz. thinly sliced pepperoni
1/3 cup julienne roasted yellow pepper
1/3 cup chopped red onion
1/4 cup pitted mixed olives, drained
5 chopped pepperoncini
1 oz. Provolone cheese, cut into 1/4-inch cubes
2 Tbsp. grated Romano cheese
1/2 cup olive oil
3 Tbsp. red wine vinegar
1/2 tsp. salt
1/4 tsp. ground black pepper
Directions
1. Combine lettuce, artichoke hearts, salami, pepperoni, peppers, onion, olives, pepperoncini and cheeses. Refrigerate 2 to 3 hours.
2. Add combined oil, vinegar, salt and pepper. Toss gently to combine.
3. Divide mixture evenly among 4 plates and serve.
