Bruschetta Caprese Salad with Salami, Pepperoni and Capicola
Ingredients
5 oz. diced fresh Mozzarella
2 oz. diced Genoa salami
2 oz. thinly sliced capicola
2 oz. diced pepperoni
1/4 cup balsamic vinaigrette
1/4 cup olive oil
1/4 cup diced red onion
1 roasted yellow pepper, peeled, seeded and julienned
4 diced grape tomatoes
2 Tbsp. chopped fresh basil
16 baguette slices, toasted
Directions
1. Combine all ingredients except toasted baguette slices. Refrigerate 1 to 2 hours.
2. For each serving, plate 4 baguette slices. Top with one-fourth of salad mixture and serve.
