Bruschetta Caprese Salad with Salami, Pepperoni and Capicola

Ingredients

  • 5 oz. diced fresh Mozzarella
  • 2 oz. diced Genoa salami
  • 2 oz. thinly sliced capicola
  • 2 oz. diced pepperoni
  • 1/4 cup balsamic vinaigrette
  • 1/4 cup olive oil
  • 1/4 cup diced red onion
  • 1 roasted yellow pepper, peeled, seeded and julienned
  • 4 diced grape tomatoes
  • 2 Tbsp. chopped fresh basil
  • 16 baguette slices, toasted

Directions

  • 1. Combine all ingredients except toasted baguette slices. Refrigerate 1 to 2 hours.
  • 2. For each serving, plate 4 baguette slices. Top with one-fourth of salad mixture and serve.
