Toasted Bacon and Avocado Sandwiches


  • 6 slices bacon
  • 5 Tbsp. mayonnaise
  • 3 Tbsp. chopped fresh chives
  • 2 Tbsp. chopped fresh dill
  • 1 ripe California avocado (8 to 10 oz.)
  • 1 tsp. fresh lemon juice
  • 4 slices whole grain bread, toasted
  • 1/2 cup radish sprouts


  • Preparation:
  • 1. Cook bacon in skillet on medium heat until brown and crisp. Remove and drain on paper towels. Set aside
  • 2. Combine mayonnaise, chives and dill in a bowl.
  • 3. Halve, pit, and peel avocado; cut lengthwise into thin slices. Gently toss slices with lemon juice.
  • 4. Spread one side of each slice of bread with herbed mayonnaise. Divide bacon, avocado and sprouts over 2 slices. Top each with second slice of bread. Cut in half to serve.
