Ziti with Onions, Prosciutto and Goat Cheese

Ingredients

  • 2 Tbsp. olive oil
  • 1 cup sliced red onions
  • 1 tsp. sugar
  • 2 cups chicken stock
  • 1 cup white wine
  • 8 oz. uncooked ziti
  • 3 cups diced tomatoes
  • 2 cups diced chicken
  • 1 cup diced prosciutto
  • 4 oz. roasted sliced Portobello mushrooms
  • 2 cups arugula
  • 1/2 cup fresh basil chiffonade
  • 1/2 cup chopped fresh parsley
  • 1/2 cup crumbled goat cheese

Directions

  • 1. Cook onions in oil in small skillet on medium heat 2 minutes. Stir in sugar; reduce heat to medium-low. Continue cooking mixture 12 to 15 minutes or until onions are caramelized. Keep warm; set aside.
  • 2. Meanwhile, bring stock and wine in a medium saucepan on medium-high heat to a boil. Stir in ziti; reduce heat to medium. Cook according to package directions for al dente. Stir in tomatoes, chicken, prosciutto and mushrooms. Heat 5 minutes.
  • 3. Stir in arugula, basil and parsley. Heat 1 minute.
  • 4. Divide mixture evenly between 4 plates. Sprinkle with reserved onions and cheese, and serve.
