Quinoa Salad

Ingredients

  • 8 oz. cooked diced smoked sausage
  • 2 cups cooked quinoa
  • 4 oz. grilled asparagus spears, cut into 1-inch pieces
  • 4 oz. blueberries
  • 4 oz. sliced fresh peaches
  • 4 oz. diced tomatoes
  • 2 cups arugula
  • 4 oz. Champagne Vinaigrette
  • 4 oz. crumbled Feta cheese

Directions

  • 1. Gently toss all ingredients except cheese.
  • 2. Evenly divide between 4 plates. Sprinkle with cheese and serve.
