Ingredients
8 oz. cooked diced peppered bacon
4 oz. crumbled Feta cheese
4 oz. diced tomatoes
4 cups baby spinach
1 cup unpeeled julienne pears
4 oz. Sherry Vinaigrette
4 poached eggs
1 cup fried onions
Directions
1. Gently toss bacon, cheese, tomatoes, spinach, pears and vinaigrette. Divide evenly between 4 plates.
2. Top each with a poached egg. Sprinkle with onions and serve.
