Chilled Watermelon Soup


  • 2 lb. rind removed seeded chopped watermelon
  • 2 tsp. fresh lemon juice
  • 1 tsp. peeled chopped fresh gingerroot
  • 1 tsp. chopped fresh mint
  • 1/4 cup sparkling water
  • 4 oz. julienne prosciutto


  • 1. Place all ingredients except prosciutto in work bowl of food processor. Puree until smooth. Remove and refrigerate 1 hour or until well chilled.
  • 2. Strain mixture. Divide evenly between 4 bowls. Top with prosciutto and serve.
