Chilled Watermelon Soup
Ingredients
2 lb. rind removed seeded chopped watermelon
2 tsp. fresh lemon juice
1 tsp. peeled chopped fresh gingerroot
1 tsp. chopped fresh mint
1/4 cup sparkling water
4 oz. julienne prosciutto
Directions
1. Place all ingredients except prosciutto in work bowl of food processor. Puree until smooth. Remove and refrigerate 1 hour or until well chilled.
2. Strain mixture. Divide evenly between 4 bowls. Top with prosciutto and serve.
