Hero Sandwich


  • 1 Italian baguette, horizontally cut in half
  • 1 Tbsp. olive oil, divided
  • 8 arugula leaves
  • 1 ripe plum tomato, cut into 1/4-inch strips
  • 1 Tbsp. balsamic vinegar
  • 3 thin slices Mozzarella cheese
  • 4 fresh basil leaves
  • 2 thin slices Prosciutto di Parma
  • 4 thin slices Genoa salami


  • 1. Make a shallow well in both top and bottom of baguette by removing some of the bread. Brush both sides using 2 tsp. of the olive oil.
  • 2. Toss the arugula and tomato strips in a bowl with the remaining 1 tsp. of the olive oil and the balsamic vinegar.
  • 3. Place Mozzarella, basil leaves, prosciutto and salami on bottom half of baguette. Top with the salad. Cover with top of baguette. Cut diagonally in half and serve.
