Seafood Salad

Ingredients

  • 10 oz. arugula
  • 8 oz. grilled scallops
  • 4 oz. halved grape tomatoes
  • 8 slices cooked crumbled bacon
  • 2 oz. toasted walnut pieces
  • 4 oz. red wine vinaigrette
  • 4 oz. crumbled soft goat cheese

Directions

  • 1. Combine vegetables, scallops and bacon. Refrigerate until ready to use.
  • 2. Toss walnuts and vegetable mixture with vinaigrette. Divide evenly between 4 plates. Top each salad with goat cheese and serve.
