Ingredients
10 oz. arugula
8 oz. grilled scallops
4 oz. halved grape tomatoes
8 slices cooked crumbled bacon
2 oz. toasted walnut pieces
4 oz. red wine vinaigrette
4 oz. crumbled soft goat cheese
Directions
1. Combine vegetables, scallops and bacon. Refrigerate until ready to use.
2. Toss walnuts and vegetable mixture with vinaigrette. Divide evenly between 4 plates. Top each salad with goat cheese and serve.
