Turkey Cucumber and Tomato Salad
Ingredients
3 Tbsp. canola oil
1 Tbsp. fresh lime juice
1 tsp. chopped fresh thyme
1 lb. chopped reduced sodium turkey breast
3 cups chopped unpeeled cucumber
2 cups chopped tomatoes
1 cup peeled chopped avocado
1/4 cup chopped scallions
1/4 cup basil chiffonade
Directions
1. Whisk oil, lime juice and thyme; set aside until ready to use.
2. Combine turkey, chopped vegetables and herb. Refrigerate until ready to use.
3. Gently toss oil mixture with turkey mixture. Divide evenly between 4 plates and serve.
