1. Preheat standard oven to 450°F. Toss vegetables with olive oil. Place on parchment paper-lined full sheet pan. Bake 28 to 30 minutes or until crisp-tender.
2. Remove vegetables and toss with ham, parsley and tarragon.
3. Divide evenly between 4 plates and serve.
