Couscous with Peas, Lemon, Chives and Bacon
Ingredients
3/4 cup chicken stock
1/2 cup chopped shallots
2 cloves garlic, minced
1 Tbsp. extra virgin olive oil
1/4 tsp. turmeric
3/4 cup uncooked couscous
1 cup frozen peas, thawed
2 oz. cooked drained crumbled bacon
1/2 cup chopped fresh chervil
1/2 cup chopped fresh chives
1/4 cup chopped fresh marjoram
Zest and juice of 1/2 lemon
Directions
1. Bring broth, shallots, garlic, oil and turmeric in medium saucepan on medium heat to boiling.
2. Stir in couscous; cover pan. Remove from heat. Let stand 5 minutes.
3. Fluff couscous with a fork. Stir in peas, bacon, chervil, chives, marjoram, and lemon zest and juice.
4. Divide evenly between 4 plates and serve.
