Roasted Feta, Red Peppers and Pulled Pork


  • 4 oz. pulled pork
  • 1/3 cup chopped roasted red pepper
  • 1/4 cup pitted chopped Kalamata olives
  • 1/4 tsp. chopped fresh oregano
  • 1/4 tsp. chopped fresh parsley
  • 1/4 tsp. ground black pepper
  • 8 oz. crumbled Feta cheese


  • 1. Heat pulled pork in medium saucepan on medium heat until internal temperature reaches 160°F, stirring frequently.
  • 2. Stir in peppers, olives, herbs and pepper; heat through.
  • 3. Divide evenly between 4 plates. Sprinkle with cheese and serve.
