Roasted Feta, Red Peppers and Pulled Pork
Ingredients
4 oz. pulled pork
1/3 cup chopped roasted red pepper
1/4 cup pitted chopped Kalamata olives
1/4 tsp. chopped fresh oregano
1/4 tsp. chopped fresh parsley
1/4 tsp. ground black pepper
8 oz. crumbled Feta cheese
Directions
1. Heat pulled pork in medium saucepan on medium heat until internal temperature reaches 160°F, stirring frequently.
2. Stir in peppers, olives, herbs and pepper; heat through.
3. Divide evenly between 4 plates. Sprinkle with cheese and serve.
