Goat Cheese Pepperoni and Asparagus Pizza
Ingredients
One (8-inch) prepared pizza crust
2 Tbsp. olive oil
1 minced garlic clove
5 oz. cooked cubed fingerling potatoes
4 oz. thinly sliced pepperoni
2 oz. shaved red onions
8 oz. grilled asparagus spears, cut into 2-inch pieces
6 oz. shredded whole milk Mozzarella cheese
4 oz. crumbled soft goat cheese
1/2 cup grated Parmesan cheese
1 Tbsp. dried basil
Directions
1. Preheat convection oven to 350°F. Spread combined oil and garlic over top of pizza crust.
2. Evenly layer potatoes, pepperoni and onions over crust. Top with asparagus and combined cheeses. Sprinkle with basil. Place on half sheet pan.
3. Bake 8 to 10 minutes or until ingredients are heated through and cheese is melted. Cut into quarters and serve 1 piece per plate.
