Prosciutto and Asparagus Salad
Ingredients
2 Tbsp. olive oil
1 Tbsp. fresh lime juice
1 tsp. chopped fresh thyme
2 oz. thinly sliced prosciutto
1 cup peeled chopped avocado
1/2 cup grilled asparagus spears, cut into 1-inch pieces
1/4 tsp. sea salt
Directions
1. Whisk together olive oil, lime juice and thyme; set aside.
2. Evenly divide prosciutto between 4 plates. Top with combined avocado, asparagus and sea salt.
3. Drizzle each with olive oil mixture and serve.
