Ham and Roasted Pepper Sandwiches


  • 3 Tbsp. olive oil
  • 2 tsp. balsamic vinegar
  • 1/2 tsp. Dijon mustard
  • 8 slices Texas Toast, toasted
  • 1 lb. thinly sliced Ham-Off-The-Bone
  • 2 oz. thinly sliced roasted red peppers
  • 6 oz. sliced soft mild goat cheese
  • 2 oz. arugula
  • 1/4 cup thinly sliced shallots
  • 2 tsp. chopped fresh thyme


  • 1. Whisk oil, vinegar and mustard until combined. Refrigerate until ready to use.
  • 2. Evenly top 4 of the bread slices with ham, peppers and cheese.
  • 3. Combine arugula, shallots and thyme. Toss with oil mixture. Evenly spread over cheese on bread. Cover with second slice of bread. Cut each sandwich in half and serve.
