1. Whisk oil, vinegar and mustard until combined. Refrigerate until ready to use.
2. Evenly top 4 of the bread slices with ham, peppers and cheese.
3. Combine arugula, shallots and thyme. Toss with oil mixture. Evenly spread over cheese on bread. Cover with second slice of bread. Cut each sandwich in half and serve.
