Steak Sandwich with Bacon Mayo


  • 1/2 cup cooked crumbled bacon
  • 5 Tbsp. mayonnaise
  • 2 Tbsp. minced red onion
  • 2 tsp. sherry wine vinegar
  • 1-1/2 lb. heated sliced roast beef
  • 1 cup coarsely chopped tomatoes
  • 1 tsp. chili powder
  • 1/2 tsp. dark brown sugar
  • 8 slices French bread, each 1-inch thick, toasted
  • 4 oz. fresh spinach, stems removed


  • 1. Combine bacon, mayonnaise, onion and vinegar. Refrigerate until ready to use.
  • 2. Combine roast beef, tomatoes, chili powder and brown sugar. Keep warm until ready to use.
  • 3. Spread one side of each slice of bread with mayonnaise mixture. Top 4 slices evenly with spinach and beef mixture. Cover each with second slice of bread. Cut in half and serve.
