Jalapeno Frittata


  • Nonstick cooking spray
  • 8 large eggs
  • 4 oz. shredded Cheddar cheese
  • 1/2 cup chopped salami
  • 1 Tbsp. chopped fresh cilantro
  • 1 Tbsp. seeded chopped fresh jalapeno pepper


  • 1. Preheat standard oven to 350°F. Coat a 12-inch skillet with cooking spray.
  • 2. Whisk all ingredients in a medium bowl. Pour into skillet. Bake 20 to 25 minutes or until mixture is set.
  • 3. Remove from oven. Let stand 5 minutes. Carefully slide frittata out of skillet. Cut into quarters and serve.
