French Toast with Bacon-Honeyed Apples


  • 2 cups water
  • 1/4 cup sugar
  • 1/4 cup honey
  • 1 cinnamon stick
  • 1/4 vanilla bean
  • 2 peeled cored halved medium Golden Delicious apples
  • 4 large eggs
  • 1 large egg yolk
  • 2-1/2 cups milk
  • 1 cup sugar
  • 1 tsp. vanilla extract
  • 8 slices crusty bread, sliced 3/4-inch thick
  • 4 oz. cooked chopped bacon


  • 1. For Apples, combine water, sugar, honey and cinnamon in medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to a boil on medium heat, stirring to dissolve sugar.
  • 2. Reduce heat to medium-low. Simmer 5 minutes. Stir in apples. Simmer, covered, 10 to 12 minutes or until tender. Remove apples to a bowl; keep warm. Bring syrup to a boil. Boil 8 to 10 minutes, or until syrup is reduced to about 1 cup. Remove and discard cinnamon stick and vanilla bean. Keep syrup warm.
  • 3. For French Toast, whisk eggs and yolk in shallow pan. Whisk in milk, sugar and vanilla. Dip bread slices into egg mixture. Fry on preheated 325 °F flat-top grill 1 to 2 minutes per side or until golden brown.
  • 4. To serve, layer 2 slices French Toast on each plate. Divide apples evenly over top. Drizzle with syrup, sprinkle with bacon and serve.
