2 peeled cored halved medium Golden Delicious apples
FRENCH TOAST
4 large eggs
1 large egg yolk
2-1/2 cups milk
1 cup sugar
1 tsp. vanilla extract
8 slices crusty bread, sliced 3/4-inch thick
4 oz. cooked chopped bacon
Directions
1. For Apples, combine water, sugar, honey and cinnamon in medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to a boil on medium heat, stirring to dissolve sugar.
2. Reduce heat to medium-low. Simmer 5 minutes. Stir in apples. Simmer, covered, 10 to 12 minutes or until tender. Remove apples to a bowl; keep warm. Bring syrup to a boil. Boil 8 to 10 minutes, or until syrup is reduced to about 1 cup. Remove and discard cinnamon stick and vanilla bean. Keep syrup warm.
3. For French Toast, whisk eggs and yolk in shallow pan. Whisk in milk, sugar and vanilla. Dip bread slices into egg mixture. Fry on preheated 325 °F flat-top grill 1 to 2 minutes per side or until golden brown.
4. To serve, layer 2 slices French Toast on each plate. Divide apples evenly over top. Drizzle with syrup, sprinkle with bacon and serve.
