Fennel and Sweet Potato Hash
Ingredients
1 bulb fennel, cut into 1/2-inch cubes
2 oz. chopped bacon
12 oz. peeled sweet potatoes, cut into 1/2-inch cubes
1 tsp. minced fresh garlic
1 Tbsp. chopped fresh parsley
Directions
1. Cook fennel in boiling water to cover 3 minutes; drain.
2. Cook bacon in medium skillet on medium heat until brown and crisp. Stir in fennel, sweet potato and garlic. Sauté on medium heat 20 to 25 minutes or until all vegetables are tender.
3. Divide mixture evenly between 4 plates. Sprinkle each with parsley and serve.
