Ginger Carrot Soup
Ingredients
2 Tbsp. vegetable oil
8 oz. chopped Ham-Off-The-Bone
2 cups peeled chopped carrots
1/2 cup chopped onion
1 Tbsp. peeled minced fresh gingerroot
1 qt. chicken stock
2 cups heavy cream
1 Tbsp. chopped fresh cilantro
Directions
1. Sauté ham in oil in saucepot on medium heat 3 minutes. Stir in carrots, onion and ginger. Continue cooking 3 more minutes.
2. Stir in stock and cream. Bring to a boil; reduce heat to medium-low. Simmer, uncovered, 20 minutes.
3. Remove from heat. Puree until smooth. Return to saucepot and heat through.
4. Divide soup equally between 6 bowls. Sprinkle each with cilantro and serve.
