Smoked Salmon Cups


  • 2 oz. soft goat cheese
  • 2 oz. chopped pepperoni
  • 1 Tbsp. chopped fresh parsley
  • 1 Tbsp. chopped fresh thyme
  • 8 oz. thinly sliced smoked salmon
  • 2 cups mixed greens
  • 2 oz. balsamic vinaigrette


  • 1. Combine cheese, pepperoni, parsley and thyme. Evenly divide and spread mixture onto each slice of salmon. Fold salmon slices in half, and then in half again. Refrigerate until ready to use.
  • 2. When ready to serve, toss greens with vinaigrette. Divide evenly between 4 plates. Top with salmon “cups” and serve.
