Fall Risotto Croquettes
Ingredients
1-1/2 cups leftover risotto (any flavor)
4 oz. diced Black Forest Ham
2 oz. shredded Mozzarella cheese
1/4 cup shredded Parmesan cheese
1 egg yolk
1 Tbsp. heavy cream
2 tsp. chopped fresh thyme
4 oz. all-purpose flour
1 egg white, beaten
2 Tbsp. water
1/2 cup plain bread crumbs
Tomato sauce (optional)
Directions
1. Preheat deep fryer to 350°F.
2. Combine risotto, ham, cheeses, egg yolk, cream and thyme. Divide evenly into 4 portions. Roll into balls.
3. Roll each in flour, then dip into combined egg white and water. Roll in bread crumbs.
4. Fry 3 to 4 minutes or until golden brown. Plate 1 croquette per serving. Serve with tomato sauce, if desired.
