8 slices country white bread, sliced 1/2-inch thick
1/4 cup grainy mustard
12 oz. sliced Black Forest Ham
6 oz. crumbled Blue cheese
Directions
1. Toss radicchio and portobello mushrooms with 2 Tbsp. of oil. Grill over direct medium heat 2 to 3 minutes per side. Remove from grill; set aside.
2. Spread one side of each slice of bread with 1/2 Tbsp. of the mustard. Top 4 slices evenly with ham, cheese and grilled vegetable mixture. Cover with second slice of bread.
3. Brush outside of each sandwich using remaining 2 Tbsp. of the oil. Grill in panini press until golden brown on both sides and cheese is melted. Cut in half and serve.
