Black Forest Panini


  • 4 oz. canola oil, divided
  • 2 heads radicchio, cut into quarters
  • 4 portobello mushrooms, stems removed
  • 8 slices country white bread, sliced 1/2-inch thick
  • 1/4 cup grainy mustard
  • 12 oz. sliced Black Forest Ham
  • 6 oz. crumbled Blue cheese


  • 1. Toss radicchio and portobello mushrooms with 2 Tbsp. of oil. Grill over direct medium heat 2 to 3 minutes per side. Remove from grill; set aside.
  • 2. Spread one side of each slice of bread with 1/2 Tbsp. of the mustard. Top 4 slices evenly with ham, cheese and grilled vegetable mixture. Cover with second slice of bread.
  • 3. Brush outside of each sandwich using remaining 2 Tbsp. of the oil. Grill in panini press until golden brown on both sides and cheese is melted. Cut in half and serve.
