Multigrain Pasta with Sausage


  • 12 oz. multigrain rotini pasta, uncooked
  • 8 oz. diced sausage
  • 4 oz. diced bacon
  • 4 cups peeled seeded diced butternut squash
  • 2 cups peeled seeded diced acorn squash
  • 2 cups chopped onions
  • 16 oz. crushed tomatoes in juice
  • 2 cups chicken stock
  • 1/4 cup thinly sliced fresh basil


  • 1. Cook pasta according to package directions to al dente; rinse and drain. Set aside.
  • 2. Meanwhile, cook sausage and bacon in saucepot on medium heat until browned. Remove both; set aside. Reserve drippings in pot.
  • 3. Add squash and onions to drippings. Cook 8 minutes, stirring frequently.
  • 4. Return sausage and bacon to pot. Add tomatoes, stock and basil. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered, 10 minutes, stirring occasionally. Stir in pasta. Heat through.
  • 5. Divide mixture evenly among 6 bowls and serve.
