Acorn Squash, Bacon and Goat Cheese Pizza
Ingredients
4 cups peeled seeded diced acorn squash
2 Tbsp. canola oil
2 pizza crusts (12-inches each)
3 cups baby spinach
2 cups sliced red onions
1 cup cooked bacon
1/2 tsp. dried oregano
1/2 tsp. dried sage
8 oz. soft goat cheese, crumbled
Directions
1. Preheat convection oven to 350°F.
2. Toss squash with canola oil. Spread evenly on parchment paper-lined half sheet pan. Bake 10 to 15 minutes or until fork tender.
3. Dividing ingredients evenly between crusts, layer squash, spinach, onions and bacon. Sprinkle with spices. Top with goat cheese.
4. Bake pizza 10 to 12 minutes or until all ingredients are heated and cheese is melted.
5. Cut each pizza into 6 wedges. Plate 2 pieces per serving.
