Pan Seared Salmon with Bacon, Shallots and Dried Cranberries

Ingredients

  • Six 6 oz. salmon filets
  • 1 Tbsp. canola oil
  • 2 oz. chopped bacon
  • 2 oz. chopped shallots
  • 1 tsp. minced garlic
  • 1/4 cup dried cranberries
  • 1 tsp. fresh lemon juice
  • 1/2 tsp. coriander

Directions

  • 1. Sauté salmon in canola oil in skillet on medium-high heat 2 to 3 minutes per side. Remove from skillet; keep warm.
  • 2. Add bacon to skillet and cook on medium heat until brown and crisp.
  • 3. Add shallots and garlic to skillet. Cook 2 minutes.
  • 4. Stir in cranberries, lemon juice and coriander. Simmer 1 minute.
  • 5. Divide bacon mixture evenly among filets and serve.
