Pan Seared Salmon with Bacon, Shallots and Dried Cranberries
Ingredients
Six 6 oz. salmon filets
1 Tbsp. canola oil
2 oz. chopped bacon
2 oz. chopped shallots
1 tsp. minced garlic
1/4 cup dried cranberries
1 tsp. fresh lemon juice
1/2 tsp. coriander
Directions
1. Sauté salmon in canola oil in skillet on medium-high heat 2 to 3 minutes per side. Remove from skillet; keep warm.
2. Add bacon to skillet and cook on medium heat until brown and crisp.
3. Add shallots and garlic to skillet. Cook 2 minutes.
4. Stir in cranberries, lemon juice and coriander. Simmer 1 minute.
5. Divide bacon mixture evenly among filets and serve.
