Sausage and Red Pepper Bake

Ingredients

  • 16 baguette slices, cut 1/4-inch thick, toasted
  • 1 Tbsp. butter
  • 2 cups baby spinach
  • 1-1/2 lb. diced smoked sausage
  • 1 cup shredded Mozzarella cheese
  • 1 cup roasted red pepper strips
  • 8 large eggs
  • 1 cup milk
  • 1 cup heavy whipping cream

Directions

  • 1. Preheat standard to oven to 350°F.
  • 2. Spread baguette slices lightly with butter. Place in well-sprayed half hotel pan.
  • 3. Layer spinach, sausage, cheese and red peppers over baguettes.
  • 4. Combine eggs, milk and cream. Pour over mixture in pan. Bake 35 to 40 minutes or until knife inserted near center comes out clean. Let stand 10 minutes before cutting into 8 portions and serving.
