Ingredients
1 lb. peeled diced potatoes
3 Tbsp. canola oil
12 large eggs
3 cups baby spinach
1/2 cup cooked crumbled bacon
1/2 cup diced smoked sausage
1/4 cup shredded Parmesan cheese
1 Tbsp. chopped fresh parsley
Directions
1. Preheat convection oven to 325°F.
2. Sauté potatoes in canola oil in large deep skillet on medium heat 5 to 8 minutes or until tender.
3. Whisk eggs. Stir in spinach, bacon, sausage, cheese and parsley. Pour egg mixture into skillet with potatoes. Cover with foil.
4. Bake 15 minutes. Remove foil and continue to bake 5 to 8 minutes longer or until center is set.
5. Slide frittata out of skillet onto cutting board. Cut into 6 wedges to serve.
