Ingredients
8 oz. diced bacon
8 oz. diced sausage links
1/4 cup chopped shallots
1 tsp. minced garlic
1 tsp. dried thyme
4 cups diced sweet potatoes
Directions
1. Cook bacon and sausage in skillet on medium heat until brown. Add shallots, garlic and thyme. Cook 2 minutes.
2. Stir in sweet potatoes. Cook 10 to 12 minutes, stirring frequently, until sweet potatoes are fork tender,
3. Divide mixture evenly among 6 plates and serve.
