Green Beans with Bacon and Sage

Ingredients

  • 1-1/2 lb. fresh green beans, trimmed
  • 4 oz. diced bacon
  • 1 Tbsp. butter
  • 1 Tbsp. thinly sliced shallots
  • 1 tsp. chopped fresh sage

Directions

  • 1. Place green beans in pot with water to cover. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered, 4 to 6 minutes or until tender-crisp. Drain. Place in ice water to stop additional cooking.
  • 2. Meanwhile, cook bacon in skillet on medium heat until brown and crisp. Remove bacon and drain on paper towels. Reserve drippings in skillet.
  • 3. Add butter to drippings. Sauté shallots in skillet on medium heat 2 to 3 minutes or until translucent. Stir in sage. Drain beans. Add to skillet. Heat through.
  • 4. Divide green bean mixture evenly among 6 plates. Sprinkle with bacon before serving.
