Mediterranean Salad

Ingredients

  • 3 cups arugula
  • 3 cups mixed salad greens
  • 2 cups shaved fennel
  • 1 cup thinly sliced unpeeled cucumber
  • 1/2 cup Greek Vinaigrette Dressing
  • 6 oz. thinly sliced prosciutto
  • 1/2 cup shredded Romano cheese

Directions

  • 1. Toss arugula, greens, fennel and cucumber with dressing until coated.
  • 2. Divide prosciutto evenly among 4 salad plates. Top with greens mixture. Sprinkle with cheese before serving.
