White Bean and Pasta Soup
Ingredients
2 cups chopped onions
1/3 cup chopped celery
3 Tbsp. olive oil
4 cups chicken broth
2 cups cooked cannellini beans
1 cup cooked penne pasta
1 cup chopped pepperoni
Directions
1. Sauté onion and celery in oil in stockpot on medium-high heat 5 minutes.
2. Stir in broth, beans, pasta and pepperoni. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered, 15 minutes.
3. Divide soup evenly among 6 bowls.
