Green Beans with Hot Ham
Ingredients
1 tsp. olive oil
1 cup coarsely chopped Pavone hot ham
1 lb. green beans, trimmed, cut vertically in half
1 cup thin strips roasted red bell pepper
1/2 cup chicken stock
Directions
1. Cook ham in olive oil in skillet on medium heat until brown and crisp. Remove and drain on paper towels.
2. Add green beans and bell pepper to skillet. Toss on medium-high heat 1 minute or until coated with drippings.
3. Add stock; bring to a boil. Reduce heat; simmer, covered, 4 to 6 minutes or until vegetables are crisp-tender.
4. Divide evenly among 6 plates. Sprinkle with ham before serving.
