TCB Salad

Ingredients

  • 8 oz. thinly sliced capicola sausage
  • 2 cups halved red grape tomatoes
  • 2 cups halved yellow grape tomatoes
  • 1/2 cup thinly sliced red onion
  • 1-1/2 cups peeled thinly sliced cucumbers
  • 1/2 cup balsamic vinaigrette dressing
  • 2 Tbsp. chopped fresh basil

Directions

  • 1. Combine all ingredients, except basil.
  • 2. Serve at room temperature or chilled.
  • 3. Garnish each serving with basil when ready to serve.
