Mediterranean Pasta Salad

Ingredients

  • 1 lb. penne pasta, uncooked
  • 12 oz. diced fresh Mozzarella
  • 6 oz. diced Pavone hot ham
  • 6 oz. diced hard salami
  • 4 oz. roasted red bell peppers, cut into strips
  • 1/3 cup olive oil
  • 2 Tbsp. thinly sliced fresh basil
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. crushed garlic
  • 1 tsp. chopped fresh oregano

Directions

  • 1. Cook pasta according to package directions to al dente; drain. Place pasta in ice bath to cool; drain.
  • 2. Combine all ingredients.
  • 3. Serve at room temperature or chilled.
