Black Bean and Sausage Salad
Ingredients
8 oz. diced capicola sausage
2 cups fresh corn kernels
2 cups canned black beans, rinsed and drained
1 cup diced green bell pepper
1/4 cup chopped onion
1/4 cup red wine vinegar
2 Tbsp. chopped fresh cilantro
1 tsp. chopped garlic
Directions
1. Sauté capicola in skillet on medium-high heat 4 to 6 minutes or until crisp.
2. Add corn; continue cooking 3 to 5 minutes or until browned. Remove corn and sausage from skillet; cool.
3. Combine all ingredients. Serve at room temperature or chilled.
