Potato Salad


  • 4 lb. red-skinned boiling potatoes
  • 6 Tbsp. mayonnaise
  • 6 Tbsp. plain yogurt
  • 1/2 cup chopped green onions
  • 1/4 cup cider vinegar
  • 3 Tbsp. chopped fresh parsley
  • 4 tsp. prepared horseradish
  • 3 lb. smoked sausage, cut into 1/4-inch thick pieces


  • 1. Cook potatoes in boiling water to cover on medium heat 18 to 20 minutes or until fork tender. Drain; cool slightly. Slice potatoes and place in a large bowl.
  • 2. Combine mayonnaise, yogurt, onions, vinegar, parsley and horseradish. Stir into potatoes. Fold in sausage.
  • 3. Serve at room temperature or chilled.
