Capicola and Pepperoni Sandwich


  • 6 Tbsp. extra virgin olive oil
  • 6 thick slices ripe beefsteak tomatoes
  • 1/2 cup coarsely torn fresh basil
  • 2 tsp. dried oregano
  • 1/2 tsp. coarse kosher salt
  • 12 thick slices brioche, lightly toasted
  • 4 cups mixed salad greens
  • 12 oz. thinly sliced capicola sausage
  • 12 oz. thinly sliced pepperoni
  • 18 oz. fresh Mozzarella cheese, sliced


  • 1. Drizzle olive oil over tomato slices. Sprinkle with basil, oregano and salt.
  • 2. Divide greens over half of the brioche slices. Top each with tomatoes, capicola, pepperoni and cheese.
  • 3. Cover cheese with second slice of brioche.
