3 large ripe tomatoes, seeded and diced
3 ripe avocados, pitted, peeled, and diced
12 strips bacon, cooked and coarsely chopped
3 hard-boiled eggs, coarsely chopped
6 oz. crumbled reduced-fat Blue cheese
1-1/2 cups red wine vinaigrette dressing
Directions
1. Divide lettuce evenly among 6 plates.
2. Top with chicken, tomatoes, avocados, bacon and eggs.
3. Sprinkle each with Blue cheese crumbles.
4. Serve with dressing on the side.
