Cobb Salad

Ingredients

  • 1-1/2 lb. chopped romaine lettuce
  • 1-1/2 lb. boneless skinless chicken breast halves, cooked and diced
  • 3 large ripe tomatoes, seeded and diced
  • 3 ripe avocados, pitted, peeled, and diced
  • 12 strips bacon, cooked and coarsely chopped
  • 3 hard-boiled eggs, coarsely chopped
  • 6 oz. crumbled reduced-fat Blue cheese
  • 1-1/2 cups red wine vinaigrette dressing

Directions

  • 1. Divide lettuce evenly among 6 plates.
  • 2. Top with chicken, tomatoes, avocados, bacon and eggs.
  • 3. Sprinkle each with Blue cheese crumbles.
  • 4. Serve with dressing on the side.
