6 pork sausage links (6 oz. each), diagonally cut into 1/2-inch thick pieces
1/4 cup olive oil
1 lb. carrots, cut into batons
2 cups quartered cooked red potatoes
1-1/2 cups fresh corn kernels
1-1/2 cups grape tomatoes
1 cup asparagus tips
1 cup chopped red onion
1/2 cup chicken stock
1. Cook sausage pieces in olive oil in skillet on medium heat 2 minutes.
2. Stir carrots, potatoes, corn, tomatoes, asparagus and onions into skillet. Cook 7 minutes.
3. Add chicken stock; bring to a boil; reduce heat. Simmer, uncovered, 4 minutes or until stock is reduced by two-thirds.
4. Divide mixture evenly between 6 plates and serve.
