Gazpacho with Roasted Red Peppers and Caramelized Ham

Ingredients

  • 3 cups tomato juice
  • 2 cups chopped fresh tomatoes
  • 1 cup peeled diced cucumber
  • 3 Tbsp. extra virgin olive oil, divided
  • 1-1/2 Tbsp. red wine vinegar
  • 1 Tbsp. chopped chipotle peppers
  • 1 Tbsp. prepared horseradish
  • 1 garlic clove, chopped
  • 6 slices soft fresh goat cheese, each 1/4-inch thick
  • 12 oz. julienne cut ham
  • 3/4 cup julienne cut roasted red bell peppers
  • 2 Tbsp. chopped fresh cilantro

Directions

  • 1. Combine tomato juice, tomatoes and cucumbers. Stir in 2 Tbsp. of the oil, vinegar, chipotle peppers, horseradish and garlic.
  • 2. Sauté ham in remaining 1 Tbsp. olive in skillet on medium heat 4 to 6 minutes or until crisp.
  • 3. Divide soup evenly between 6 bowls. Top each with a slice of goat cheese, ham, peppers and fresh cilantro before serving.
